1 Spaghetti Squash (cut in to two halves, scoop out the seeds, bake at 375 degrees for 50 minutes; let cool then use a fork to scrape the inside of the squash creating spaghetti; add the spaghetti to the other ingredients at the end to warm it up and sauce it up
In a deep skillet with 1 tbls oil, add the following ingredients:
1 Pepper, diced
1 Jalapeno Pepper, minced
2 Cloves Garlic, minced
2 Carrots, chopped
1/4 cup diced onion
1-2 handfuls of leafy greens (spinach, kale, chard)
1/4 peas
1/2 cup chopped tomatoes
15 ounce can of black beans
2 tbls apple cider vinegar
2 tbls cumin
1 tsp chili powder
pinch of salt
