Mexican Spaghetti Squash


  • 1 Spaghetti Squash (cut in to two halves, scoop out the seeds, bake at 375 degrees for 50 minutes; let cool then use a fork to scrape the inside of the squash creating spaghetti; add the spaghetti to the other ingredients at the end to warm it up and sauce it up

In a deep skillet with 1 tbls oil, add the following ingredients:

  • 1 Pepper, diced

  • 1 Jalapeno Pepper, minced

  • 2 Cloves Garlic, minced

  • 2 Carrots, chopped

  • 1/4 cup diced onion

  • 1-2 handfuls of leafy greens (spinach, kale, chard)

  • 1/4 peas

  • 1/2 cup chopped tomatoes

  • 15 ounce can of black beans

  • 2 tbls apple cider vinegar

  • 2 tbls cumin

  • 1 tsp chili powder

  • pinch of salt
